Asparagus in Sous-vide Cooker

Preparation time: About 10 min.

Ingredients (for 4 portions)

  • 500 g whire asparagus
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • zest of 1 lemon (organic)
  • 30 g butter

Preparation:

Remove the peel from the white asparagus and the woody ends. If necessary, cut the asparagus spears in half and place them in a vacuum bag. Grate the zest of the lemon using a kitchen grater. Mix the lemon zest with the butter, sugar and salt and place in the vacuum bag. Now remove the air from the bag with a vacuum sealer and seal it airtight. Place the vacuum bag in the sous-vide cooker at 80 °C for approx. 30 minutes. When the time is up, remove the asparagus from the bag and serve with boiled potatoes and hollandaise sauce, for example.
