Preparation time: approx. 10 minutes Ingredients for 1 serving: 2 slides of toast, e.g. wholemeal toast 50 g avocado 1 tsp lemon juice Ham (cooked or raw) 1 tomato 1 handful rocket Salt Pepper Sugar Preparation: Halve and pit the avocado. Afterwards, remove the flesh with a spoon and cut into small pieces. Then mash it with a fork to a spreadable mass and season with lemon juice, salt and pepper. Wash the tomato, cut in half and carefully remove the stalk. After that, cut the tomato into small cubes and season lightly with salt, a little pepper and a little sugar. Also wash and halve the rocket. Spread the avocado cream on one side of the toast slices. Cover one slice of toast with ham, the diced tomatoes and the rocket. Place the second slice of toast on top of the sandwich with the avocado cream facing downwards and heat in a sandwich maker or contact grill. If two slices are not enough, you can add a third layer of toast in the middle. Spread this with avocado cream as described above and then double up with the ingredients. Tip: For a change of pace, slices of cured and rolled filet of pork are perfect in this sandwich combination instead of ham.
