Ingredients (makes about 2 portions) 500 g chicken breast fillet 1 onion 3 cloves garlic 2 mild chillies 20 g ground Cashews (or almonds) 1 tsp turmeric 3 tbsp lemon juice 1 tbsp soy sauce 2 tbsp brown sugar 1 tbsp grated ginger 2 tbsp oil 1 can of coconut milk 400 ml water Preparation: Cut the meat into large cubes and put aside. Peel onion and garlic and chop coarsely. Deseed the chillies and also chop. Combine the cashews, turmeric, lemon juice, soy sauce, brown sugar and ginger and either mix with an electric blender or by hand using a mortar and pestle, until it becomes a fine paste. Heat the oil in DD 1 ECO. Add the curry paste and roast for 1-2 minutes. Now add the meat and fry. As soon as the meat is cooked – now add the coconut milk and water. Stir well and bring to the boil.
