Roast the pine nuts briefly without fat or oil in a pan and leave to cool slightly. Grind the warm pine nuts and the peeled garlic cloves in a food processor until a cream is formed. Add a pinch of salt and the washed basil leaves and grind again until a green mass is formed. Now add the parmesan and olive oil and mix well again to make a creamy paste. Season the finished pesto with salt and pepper.
