Halve the pumpkin, remove the seeds and cut into large pieces. Wash and peel the carrots and potatoes and also cut into large pieces.
Put everything in the Steba blender and blend on low speed. As soon as you can no longer see any large pieces, puree the contents on high speed. Chop an onion, put it in a saucepan and sauté in butter. Deglaze with vegetable stock and bring to the boil. Add the blended vegetables and reduce to low heat. Add milk or cream and season to taste.
Tip: Roast the pumpkin seeds in a pan and serve on top of the hot soup!
