1 handful of sprouts (e.g. radish sprouts or bean sprouts)
Cream cheese with herbs
For the dressing:
2 tbsp. Greek yoghurt
1 tbsp honey
1 pinch of horseradish
salt and pepper
Preparation
For the dressing, mix all the designated ingredients in a small bowl. Season with salt and pepper.
Wash the baby spinach and pat dry with a kitchen towel. Peel the cucumber and cut into thin strips. Halve the avocado, scoop out the flesh and cut into thin strips. Rinse the sprouts under running water and sauté briefly in a pan with a little oil. Spread a piece of toast with goat’s cream cheese (more or less, as you like). Top with cucumber, peppers and spinach. Drizzle a little dressing on top. Then top with the sprouts and avocado and cover with a second slice of toast. Prepare the second toast sandwich in the same way.
Tip: The finished sandwich can be warmed up in a sandwich maker. Then do not spread the cream cheese too thickly or it will run out.
