Clean the peppers and grill them. Then peel them and cut them into quarters. Cut the zucchini and tomatoes into thin slices. Cut the shallots into thin rings. Crumble the feta into medium sized pieces with your hands. Cut the ciabatta into thin slices and toast.
Blend the honey with the Dijon mustard, peeled garlic cloves, white wine vinegar, white wine, olive oil and the pesto in a blender to make a vinaigrette. Season to taste with salt and pepper. If the vinaigrette is too viscous, add a teaspoon of water and blend again. Then taste again, adding a little more water if necessary.
Fill a large bowl in layers in the following order: ciabatta slices, peppers, feta, zucchini, shallots, tomatoes. Drizzle a little vinaigrette over each layer, season tomato and zucchini layers with salt and pepper.
The layered salad should be infused for at least 5 hours, better overnight.
For variety, you can also swap or add ingredients as you like, such as shredded carrots, diced avocado, corn, sliced cucumber or grated cheese.
