Always the same recipes can get really boring in the long run! So how about a new inspiration?
Orange salmon with cashew rice does not only sound exotic, but also offers plenty of protein and, in combination with the lightly salted cashew rice, provides a taste explosion!
Preparation time: approx. 40 minutes
Ingredients:
250 g rice
4 salmon fillets
1 organic orange
2 tbsp. herbs (e.g. parsley and dill)
5 tbsp. olive oil
50 g salted cashews, coarsely chopped
some salt & pepper
Preparation:
Cook rice in salted water according to package instructions until al dente. Preheat oven to 180°C (convection oven).
Wash the orange with hot water, dry, finely grate the peel and squeeze out the juice. Wash herbs, shake dry, chop and mix for the marinade with orange juice, orange zest, 4 tablespoons olive oil and some salt and pepper. Rinse salmon under cold water, pat dry and toss in marinade.
Brush baking dish with remaining oil. Spread rice in baking dish and mix in coarsely chopped cashews. Place marinated salmon fillets on top and drizzle with remaining marinade.
