Beat the eggs with the sugar until foamy. Then add the quark and salt and mix well. Stir in the flour, baking powder, vanilla sugar, the vanilla pulp and some lemon zest until a homogeneous mixture is formed.
Heat the deep fryer. Using two teaspoons, gradually slide the batter into the hot fat. The fat must not get too hot, otherwise the curd balls will burn and taste bitter. The balls are ready after 2 to 3 minutes, turn them halfway through.
Drain the baked quark balls on kitchen paper and roll them in the sugar-cinnamon mixture while they are still warm. Alternatively, sprinkle with icing sugar.
