We know it too: always the same recipes can get really boring in the long run! So how about some new inspiration?
Orange salmon with cashew rice not only sounds exotic, but also offers plenty of protein and, in combination with the lightly salted cashew rice, makes for a taste explosion!
Cook the rice in salted water according to the package instructions until al dente. Preheat the oven to 180°C (fan oven).
Wash the orange in hot water, dry it, finely grate the peel and squeeze out the juice. Wash the herbs, shake dry, chop and mix with the orange juice, orange zest, 4 tbsp olive oil and a little salt and pepper for the marinade. Rinse the salmon under cold water, pat dry and toss in the marinade.
Brush the casserole dish with the remaining oil. Spread the rice in the baking dish and mix in the coarsely chopped cashews. Place the marinated salmon fillets on top and drizzle with the remaining marinade.
Cook everything in the oven for about 20 minutes.
