Sure, you can simply grill your salmon fillet as a whole, wrapped in aluminium foil. But you can also dice it, deliciously marinate it and enjoy it as grilled salmon skewers with lemon:
Preparation time: in total approx. 1,5 hours
Ingredients:
500 g salmon fillet without skin
2 cloves garlic
2 stalks spring onions
3 tbsp olive oil
1 tbsp mustard
1 tsp dill
2 organic lemons
1 tbsp sugar
A little salt & pepper
Preparation:
Rinse the salmon fillet thoroughly and pat dry. Then, cut into thick cubes. Peel the garlic and wash the spring onions. Then, cut the garlic into pieces and the spring onions into rings.
Next, put both in a bowl with the olive oil. Add the mustard and dill. Wash both lemons, slice one, halve the other and grate the zest. Squeeze the juice from one half. Add both to the marinade. Add sugar, salt and pepper to the marinade and mix thoroughly. Then, brush the salmon cubes with it and marinate in the fridge for about 1 hour.
Take the salmon cubes out of the fridge and put them on the skewers. There should be 3 pieces of salmon on each skewer. If desired, place a slice of lemon between the cubes.
Now coat the salmon skewers again with a little oil and grill for approx. 8 minutes, turning regularly.
