Ingredients:
125 g frozen spinach leaves
4 eggs
50 g grated cheese
50 g grated parmesan
250 g smoked salmon
200 g herb cream cheese
some salt & pepper
some lemon juice
Preparation:
Preheat the oven to 180°C (fan oven) and line a baking tray with baking paper.
Defrost the spinach and squeeze well. Beat the eggs and mix them with the spinach, salt, pepper, grated cheese and Parmesan.
Spread the spinach mixture on the baking tray and bake at 180°C for 10 minutes. Once baked, allow to cool completely and then place on cling film. Spread generously with the herb cream cheese, then spread the salmon on top and drizzle with a little lemon juice. Roll up tightly and place in the fridge for at least 1 hour. Cut the roll into slices about 2 cm thick and serve.
