4 zucchinis
Olive oil
150 g breadcrumbs
¼ teaspoon cayenne pepper
¼ teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon pepper
30 g parmesan cheese
Preparation
Preheat the oven to 220 °C. Cut off the ends of the zucchini and cut in half. If the zucchini is quite long, then cut into three pieces if necessary. Push a wooden skewer (e.g. shish kebab) through the center of the zucchini so that the zucchini is centered on the skewer. Using a small knife, cut diagonally up to the centered wooden skewer, twisting the zucchini to create a spiral. Carefully pull the zucchini spiral apart and brush with olive oil. Set the zucchini spiral aside.
In a bowl, mix the bread crumbs, cayenne pepper, chili powder, garlic powder, onion powder, salt, pepper, and Parmesan cheese until well combined. Sprinkle the spice mixture over the zucchini spirals or turn and roll the zucchini spirals in the spice mixture until well coated.
Bake the zucchini spirals either in a preheated oven at 220 °C on a baking tray for about 30 minutes, turning them after 15 minutes, alternatively put them on the grill. Serve with various dips or herb curd.
