Peel the potatoes, cut into chunks and boil in saltwater. Then drain, mash and let it cool. Wash and peel the carrots, wash the courgettes and grate both – roughly, if you want the pieces visible; finely, if you want the vegetables to disappear. Put the grated vegetables in a bowl, sprinkle with about 1 tsp of salt and mix well. Put aside. Add the warm water to a mixing bowl, then add the yeast and a pinch of sugar. Allow to stand for 10 minutes until small bubbles form. Stir in olive oil and the mashed potatoes. Squeeze the excess water from the grated vegetables and add them together with flour, salt and linseed to the bowl. Using stand mixer or an electrical hand mixer knead for 1-2 minutes at the lowest level, then 5-10 minutes at the highest level. The dough becomes softer with time, so do not add additional water. Leave the dough covered for 30 minutes in a warm place. Then knead briefly on the floured work surface and transfer the dough into the greased and floured pan of the bread maker. Set to the desired program and switch it on, the rest will now be done for you by the machine.
