Crumble the feta and spread around the edges of a non-stick frying pan. Keep the centre clear, as this is where the egg will be beaten in later. Fry the cheese a little over a medium heat.
Now crack in the egg and season with a little salt and pepper to taste. Place the lid on the pan and fry the egg over a medium heat until it reaches the desired consistency.
To make the cheese crispy, remove the lid towards the end of the cooking time so that excess water can evaporate.
Meanwhile, slice the avocado and spread it on a crispy piece of toast.
Once the egg is ready and the feta is nice and crispy, place the feta egg on the bread and enjoy!
