What's better than cheese? That's right, melted cheese!
The recipe below is the epitome of cheesy comfort food: the grilled cheese sandwich. For that certain something, we pimp the classic with red wine onions....
Peel the onions and cut them into rings. Then fry in a little oil in the pan until translucent. Add the sugar to the pan and let it caramelise while stirring constantly. Then deglaze with red wine and simmer gently until the red wine has boiled away.
Butter one side of the white bread completely. Cover the bread with cheddar, pecorino and mozzarella cheese and the red wine onions and fold over. The buttered side should remain on the outside.
Toast the sandwich in the contact grill until golden brown. Alternatively, fry the grilled cheese sandwich in a pan over medium heat (approx. 5 minutes on each side).
