Why this jam is perfect for Christmas
The combination of tart sour cherries, sweet apples and a hint of cinnamon gives this jam its incomparably Christmassy flavour. Ideal as a gift from the kitchen or for snacking yourself. Place the frozen sour cherries in a pan and mix with the preserving sugar. Peel and chop the apples and stir into the cherries. Now add the cinnamon and leave the fruit mixture to defrost slowly at room temperature, stirring occasionally.
While the fruit is defrosting, boil the jam jars in hot water and then place on a clean cloth to drain.
Once the sour cherries are completely defrosted, add the mixture and bring to the boil, stirring constantly. Simmer the mixture for about 4 minutes - and then pour directly into the prepared jars, seal tightly and turn upside down for 1-2 minutes. This creates a vacuum and sterilises the rim of the lid.
