Then our Asian noodle salad with lime dressing just the thing for you! This fresh glass noodle salad combines crunchy vegetables with a perfectly balanced combination of sweet, sour and spicy. Glass noodles form the basis, making the dish pleasantly light - ideal for a healthy lunch or dinner.
The lime dressing provides a wonderfully fresh note, while garlic, ginger and chilli give the salad the necessary spice. Rounded off with crunchy peanuts and fresh coriander, this salad is a real flavour experience.
Cook the glass noodles according to the packet instructions.
Peel and finely chop the ginger and garlic. Halve and squeeze the lime. Wash and trim the spring onions and cut into fine rings. Peel the carrots and cut into thin strips approx. 5 cm long. Wash the peppers, remove the core and stem and also cut into thin, 5 cm long strips.
To make the dressing, mix the lime juice with the soya sauce, sambal olek, sesame oil and honey. Then add the ginger and garlic and leave to infuse.
Now place the vegetables in a bowl with the glass noodles, pour over the dressing and mix well.
Wash the coriander, shake dry and chop finely. Roughly chop the peanuts.
Divide the glass noodle salad between 4 deep bowls and garnish with coriander and peanuts.
