First wash and peel the carrots and then cut into long, thin strips. Wash the spring onion and cut into thin rings. Wash, drain and roughly chop the coriander.
To make the dressing, mix the soy sauce, rice vinegar, sesame oil, honey, grated ginger, chopped garlic, sriracha and lime juice together in a small bowl. Season to taste with salt and pepper.
Then place the carrots and spring onions in a large bowl, pour over the dressing and mix everything together well. Now sprinkle the salad with the chopped coriander and sesame seeds and serve.
