Anyone who has ever been to a street food festival will be familiar with Bao Buns. The soft, steamed buns are a great alternative to traditional burger and can be filled with anything your heart desires.
With this recipe, we'll show you how to make Bao Buns with delicious chilli chicken.
For the rolls, put the flour in a bowl. Dissolve the sugar in the water. Crumble the yeast and add it to the water. Now add the water, oil and approx. 7 g salt to the flour. Knead the contents for approx. 3 minutes with the dough hook of the hand mixer until a smooth dough is formed.
Cover and leave to rise for approx. 1 hour at room temperature until the dough has doubled in volume.
In the meantime, wash and dry the lime and finely grate the zest. Halve the lime and squeeze out the juice. Rinse the meat in cold water, pat dry and cut into small cubes.
In a bowl, mix together the soy sauce, fish sauce, 2 tbsp chilli sauce and 2 tbsp lime juice. Add the meat and mix well. Cover and chill for approx. 30 minutes.
Wash the pointed cabbage and cut into fine strips. Peel the carrots, cut them in half lengthwise and cut into fine strips. Peel the onion and cut into very fine rings.
Mix 2 tbsp lime juice with sugar. Add the cabbage, carrots, sprouts and onion and mix. Cover and set aside.
Coarsely chop the nuts. Wash the coriander, shake dry and chop finely, except for a few leaves for garnish.
For the sauce, mix the mayo with chopped coriander, 1 tbsp chilli sauce, 2 tbsp lime juice and zest, then cover and chill.
Now roll out the dough until it is about 1 cm thick. Cut out approx. 8 circles with a round cutter (approx. 11 cm Ø).
Brush the dough circles with the remaining vegetable oil. The oil ensures that the bao buns do not stick together during steaming.
Cut out a piece of baking paper for each circle. Fold the dough circles into half moons and place each one on a small piece of baking paper. Fold in the circles, place them with the baking paper in the steamer and steam for approx. 13 minutes.
Now heat some oil in a pan and fry the meat over medium heat for about 5 minutes. Season with salt and pepper. Remove.
Unfold the buns, spread with sauce and fill with salad mix and meat.
Finally, sprinkle with the remaining coriander and the chopped nuts and serve!
