First sauté the onions and garlic in oil, then add the mince and fry until crumbly.
Season with curry, turmeric and cumin. Then stir in the chutney, jam, sultanas, almonds and vinegar.
Squeeze out the bread soaked in milk and add to the mixture. Mix everything well and season with salt and pepper.
Place the finished meat mixture in a greased casserole dish.
For the egg layer, whisk the eggs with the milk, season with salt and pour evenly over the meat. Garnish with bay leaves.
Bake at 180 °C (top/bottom heat) for approx. 30-40 minutes until the egg layer is firm and golden brown.
Traditionally, bobotie is served with yellow rice flavoured with turmeric and sultanas and a little chutney.
