Argentina is known for its savoury dishes, and empanadas are one of the most popular and versatile! To make the dough, mix the flour with the salt, work in the cold butter in small pieces until you have a crumbly mixture. Add the egg and water and knead into a smooth dough. Wrap in cling film and chill for 30 minutes.
Heat the oil in a pan, sauté the onions and garlic until translucent. Add the mince and fry until crumbly. Stir in the tomato purée, cumin and paprika powder. Remove from the heat and fold in the diced egg and chopped olives. Season with salt and pepper and leave to cool.
Then roll out the dough thinly and cut out circles (approx. 12 cm in diameter).
Place 1 tbsp of the filling in the centre of each, moisten the edges with a little water, fold together and press down firmly. Seal the edges with a fork or plait them artistically.
Brush the empanadas with beaten egg and bake in a preheated oven at 180 °C (top/bottom heat) for approx. 20-25 minutes until golden brown. Alternatively, deep-fry in hot oil until crispy.
Serve the empanadas warm with chimichurri or a spicy salsa.
