Lebanese cuisine stands for freshness, variety and flavour - and fattoush embodies this in its most beautiful form. The traditional bread salad from Lebanon is a real star of oriental cuisine: it combines crispy flatbread, colourful, crunchy vegetables, fresh herbs such as mint and parsley and a lemony, spicy dressing with pomegranate syrup, which gives the whole thing a wonderfully fruity note.

Fattoush is not only incredibly flavourful, but also light, healthy and vegan - ideal as a summer dish, side dish or refreshing starter. The combination of different textures is particularly typical of this Lebanese salad: crispy, fresh, juicy and flavoursome. A few simple ingredients are turned into a real flavour experience that immediately makes you want to travel to the Middle East.

Whether as part of a traditional mezze platter, as a light lunch or as a refreshing accompaniment to grilled meat or falafel - fattoush is always perfect. In combination with ingredients such as cucumber, tomatoes, peppers and a hint of sumac, this salad is not only a visual highlight, but also brings culinary sunshine to your plate.

Preparation

Step 1

First cut the flatbread into bite-sized pieces and toast in a pan with a little olive oil until golden brown or bake in the oven at 180 °C until crispy.

Step 2

Wash the lettuce and tear into bite-sized pieces. Wash and chop the tomatoes, cucumber, pepper, spring onions and radishes. Wash the herbs, shake dry and roughly chop.

Step 3

For the dressing, mix the olive oil, lemon juice, pomegranate syrup, garlic, salt and pepper well.

Step 4

Now place the salad in a large bowl, mix with the dressing and leave to marinate briefly. Top with pieces of toasted flatbread and sprinkle with sumac and zatar - and enjoy!

  • 2 flatbreads (Lebanese pita)
  • 1 lettuce or romaine lettuce
  • 2 tomatoes
  • 1 cucumber
  • 1 pepper, red
  • 3 spring onions
  • 1 bunch of radishes
  • 1 small handful of fresh mint
  • 1 small handful of fresh parsley
  • 1 tsp sumac
  • 1 tsp salt
  • 1 tsp zatar (optional)
  • For the dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp pomegranate syrup
  • 1 clove of garlic (finely chopped)
  • ½ tsp salt
  • ½ tsp pepper
