Preparation

Step 1

For an authentic dim sum experience at home, you can make your own Asian vegetable dim sum with this simple recipe - perfect as a snack or light starter for several people. Preparing the dim sum is straightforward and starts with a flavoursome vegetable filling. First heat a little oil in a pan and then add the finely chopped garlic and freshly grated ginger. Fry the spices until they develop their full flavour and smell delicious.

Step 2

Now it's time for the vegetables: add diced carrots, finely chopped white cabbage (or Chinese cabbage) and finely chopped mushrooms such as shiitake or button mushrooms. Add spring onions that have been finely sliced into rings. Fry the vegetables for about 5 minutes until they are soft and then season the filling with a tablespoon of soya sauce and a teaspoon of sesame oil. To round off the flavour, you can season the filling with salt and pepper to taste. If you have fresh herbs such as coriander or chives, you can also finely chop them and mix them in. Leave the filling to cool slightly to make it easier to fill the dumplings.

Step 3

Now it's time to mould the dim sum: Place a sheet of dough (e.g. wonton or dim sum dough) on the palm of your hand and place a small spoonful of the filling in the centre. Gently press the edges inwards to create the typical, slightly rolled shape. Flatten the underside of the dim sum slightly so that they are stable.

Step 4

Then place the dim sum on the oiled rack of your steamer and steam for around 10-12 minutes until the batter is nice and translucent.

The dim sum is best served hot and with a selection of dips, such as soy sauce or sweet and hot chilli sauce.
