Then try our stuffed avocado with eggs and bacon. This uncomplicated dish offers a lot of enjoyment with little effort - that's a promise!
Tip: If you don't want to use meat, replace the bacon with diced tomatoes and feta. Simply cut some feta and tomatoes into small cubes and sprinkle them on top of the hot avocado.
Preheat the oven to 200 degrees top/bottom heat.
Cut the avocados in half, remove the pit and slightly enlarge the hollows. Slightly cut the underside to optimise the standing area. Season with pepper and salt. Crack and separate one egg each and pour the yolk into the avocado, then top up with the egg white.
Cut the bacon into fine strips and place them with the avocados on a baking tray lined with baking paper. Bake everything for approx. 15 - 20 minutes.
Now remove the avocados from the oven, sprinkle with the bacon and serve.
