Stuffed sweet potatoes with quinoa and avocado

Our stuffed sweet potatoes with quinoa and avocado combine the hearty flavour of quinoa with the creaminess of avocado and the sweet tenderness of sweet potatoes to create a real treat! It's perfect for anyone looking for a healthy and delicious meal.

 

This simple recipe is not only quick to prepare, but also rich in nutrients. The combination of plant-based protein, healthy fats and fibre makes it an ideal option for a balanced dinner.

 

 

Preparation

Step 1

Firstly, wash the sweet potatoes, cut in half and bake in a mini oven at 200°C for about 25-30 minutes until they are soft.

Step 2

As soon as the sweet potatoes are soft, remove from the oven and leave to cool slightly.

Step 3

Then mix the inside of the potato with a little butter and the cheese.

Step 4

Now fill the sweet potato with quinoa, avocado and lettuce, one after the other.

Step 5

Sprinkle with fresh coriander and drizzle with lime juice and a little olive oil. Finally, season with salt and pepper to taste - and enjoy!

  • 1 large sweet potato
  • 1 cup quinoa, cooked
  • 1 avocado, cut into slices
  • approx. 20 g fresh lettuce of your choice, washed and finely chopped
  • approx. 10 g butter
  • 2 tbsp cheese of your choice, grated
  • 1 tbsp fresh coriander, chopped
  • 1 tbsp olive oil
  • 1 tsp lime juice
  • some salt & pepper from the mill
