This simple recipe is not only quick to prepare, but also rich in nutrients. The combination of plant-based protein, healthy fats and fibre makes it an ideal option for a balanced dinner.
Firstly, wash the sweet potatoes, cut in half and bake in a mini oven at 200°C for about 25-30 minutes until they are soft.
As soon as the sweet potatoes are soft, remove from the oven and leave to cool slightly.
Then mix the inside of the potato with a little butter and the cheese.
Now fill the sweet potato with quinoa, avocado and lettuce, one after the other.
Sprinkle with fresh coriander and drizzle with lime juice and a little olive oil. Finally, season with salt and pepper to taste - and enjoy!
