Preparation

Step 1

Firstly, wash the vegetables. Then cut the courgette, aubergine, pepper, tomatoes and onion into bite-sized pieces and finely chop the garlic.

Heat the olive oil in a large pan, fry the onions and garlic briefly and then add the rest of the vegetables. Season with salt, pepper and the Italian herbs and fry everything over a medium heat for about 10 to 15 minutes until the vegetables are cooked.

Step 2

Meanwhile, cut the halloumi into slices and fry in a second pan on both sides until golden brown without any additional fat.

Step 3

Finally, flavour the vegetables with a dash of balsamic vinegar and arrange on plates. Place the fried halloumi slices on top and garnish with fresh basil leaves.

Step 4

Tip: The dish can be wonderfully complemented with couscous or quinoa if you want to make it even more filling.

  • 250 g cherry tomatoes
  • 1 red onion
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 tsp Italian herbs (oregano, thyme, rosemary)
  • 1 tbsp balsamic vinegar
  • 2 packs of halloumi
  • some salt & pepper
