Okonomiyaki

Okonomiyaki - The savoury Japanese pancake


We start with a popular classic from Japan: Okonomiyaki. This delicious Japanese pancakes combines a crispy texture with a juicy filling and is topped with a savoury Okonomiyaki sauce and bonito flakes to perfection. Whether classic with cabbage and bacon or in a vegetarian version - this dish is an absolute favourite. Umami experience!

Preparation

Step 1

Mix the flour, baking powder, egg, dashi (or stock) and soya sauce in a bowl to form a smooth batter. Fold in the pointed cabbage, spring onions and tempura crunch.

Step 2

Now heat the oil in a pan, pour in the batter and shape into a thick pancake. If desired, place bacon on the top. Fry for approx. 3-4 mins. over a medium heat, then carefully turn and fry for a further 3 mins.

Step 3

Finally, garnish with okonomiyaki sauce and mayo. Sprinkle with bonito flakes or sesame seeds and serve with nori strips.

  • 150 g pointed cabbage, finely chopped
  • 100 g flour
  • 1/2 tsp baking powder
  • 1 Egg
  • 100 ml dashi or vegetable stock
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1 spring onion, finely sliced into rings
  • 1 tbsp tempura crunch or crumbled crisps (for extra crunch)
  • 50 g bacon strips or a veggie alternative (optional)
  • some oil for frying
  • Optional toppings, such as okonomiyaki sauce, Japanese mayo, bonito flakes (or roasted sesame seeds), nori seaweed strips
