Take the opportunity to unleash the flavours of courgettes, aubergines and peppers on your contact grill. The combination of the slightly sweet taste of courgette, the heartier aubergine and the fruity peppers creates a harmonious explosion of flavour in every bite. The gentle roasted flavours created by grilling bring out the natural freshness and texture of the vegetables and bring them out perfectly.

First wash the courgette, aubergine, red pepper and tomatoes and cut into thin slices or strips.
Marinate the vegetables (without the tomatoes) with olive oil, garlic, salt and pepper. Then grill on the contact grill until soft and lightly browned (approx. 3-5 minutes).
While the grilled vegetables are sizzling, cut open the panini rolls and spread with pesto and/or aioli. Then place the grilled vegetables on the rolls together with the mozzarella, Parmesan and tomatoes.
Now place the topped panini on the grill for a further 2 to 3 minutes until the bread is crispy and the cheese has melted nicely.
Finally, you can garnish the panini with fresh herbs such as basil or rocket.
