With this recipe, we'll show you how to bake the autumn classic of US cuisine at home: Pumpkin Pie!
There's one thing we can tell you in advance: the juicy pumpkin pie is perfectly complemented by its spices and has ultimate potential to become your favourite pie!
Firstly, mix the flour and salt in a bowl and add the butter (in pieces). Then gradually add the cold water and beat the dough with a fork until it can be formed into a ball.
Now chill the dough in the fridge for approx. 30 minutes.
Meanwhile, preheat the oven to 220°C (bottom heat).
Then mix the sugar, salt, cinnamon, ginger, cloves, allspice and nutmeg in a small bowl. Beat the eggs in a large bowl. Now add the pumpkin puree and the sugar and spice mixture and mix together. Then gradually add the condensed milk and mix everything together.
Now take the dough for the base out of the fridge and roll out with a rolling pin on a floured work surface to a circle approx. 25 cm in diameter. Pour into the greased springform tin (approx. 23 cm) and raise a rim. Then pour the pumpkin mixture into the tin.
Place the tin in the oven and bake for approx. 15 minutes. Then reduce the oven temperature to 175°C and bake the cake for a further 40 to 50 minutes.
Finally, test with a skewer: if a wooden skewer inserted into the centre of the pie comes out clean, the pie is ready. Now remove the pie from the oven and leave to cool completely in the tin on a cake rack.
Tip: Pumpkin pie tastes best when served with whipped cream or vanilla ice cream!
