Mix the yoghurt with the sugar. Whip the cream with the cream stiffener until stiff and fold into the yoghurt. Divide the cream between the glasses and smooth the surface with a teaspoon.
For the sauce, drain the peaches and then purée with passion fruit nectar and vanilla sugar.
Now pour the cream into dessert glasses and smooth it out. Then spread the fruit sauce over the glasses and place in the fridge for at least 30 minutes.
