Our asparagus pot is full of ingredients that are good for the whole family: In addition to asparagus, juicy meatballs, hollandaise sauce, carrots and spring onions go into the oven.
The result: a filling low carb dish that can also be enjoyed with pasta, potatoes or rice.
Wash the asparagus and cut into bite-sized pieces. Wash the spring onions and cut into fine rings. Peel the carrots and cut into fine sticks.
For the meatballs, mix the minced meat with the egg, mustard, breadcrumbs and the white part of the spring onions and form into small balls. Fry in a pan and set aside.
Fry the asparagus and carrots in the frying fat of the meatballs for about 2 minutes. Then add the green parts of the spring onions, season everything with salt and pepper and fry for another minute.
Dilute the hollandaise sauce with a little water and add salt and pepper to taste. Then fold in the cheese.
Now place the meatballs and vegetables in an ovenproof casserole dish, spread the sauce over them and cook at 160 degrees C for 20-25 minutes.
