These delicious little snacks combine the best flavour of traditional tacos with a creative twist that makes them irresistible. Whether as finger food, a snack between meals or as a highlight at your next dinner - the taco cups impress with a crispy shell and a delicious filling that you can customise as you wish.
Ideal for vegetarians and meat lovers alike!
Firstly, preheat the oven to 180°C (top/bottom heat).
While the oven is heating up, heat some oil in a pan and fry the onion and garlic until translucent.
Then add the mince (or the plant-based alternative) and fry until it is fully cooked. Then add the peppers, black beans and sweetcorn to the pan. Season the filling with cumin, paprika powder, chilli powder, salt and pepper and stir everything well before continuing to fry briefly.
While the filling is simmering, cut the tortillas into 4 even pieces. Place the pieces in the muffin moulds and shape into small shells. Fill each tortilla shell with the prepared filling and sprinkle generously with grated cheese.
Bake the taco cups in the preheated oven for 15-20 minutes until the tortillas are golden brown and the cheese has melted.
As soon as the taco cups are ready, remove from the oven and leave to cool briefly. Garnish with your favourite toppings such as avocado, salsa, jalapeños, sour cream and fresh coriander - and enjoy!
