Cook the gnocchi according to the packet instructions.
Meanwhile, finely chop the onion and garlic. Wash the tomatoes and halve or quarter them depending on their size.
Heat the olive oil in a large pan and sauté the onion and garlic until translucent. Add the tomatoes to the pan and sauté over a medium heat for about 5 minutes until they start to soften. Add the fresh spinach to the pan and stir to combine.
Now add the cooked gnocchi to the pan and mix everything well. Season to taste with balsamic vinegar, Italian herbs, salt and pepper.
Finally, mix in the mozzarella and allow to melt.
