Tomato and gnocchi pan with spinach

The gnocchi are covered in a flavoursome sauce made from tomatoes, garlic and herbs. Fresh baby spinach rounds off the dish and provides an extra portion of vitamins.

Preparation

Step 1

Cook the gnocchi according to the packet instructions.

Step 2

Meanwhile, finely chop the onion and garlic. Wash the tomatoes and halve or quarter them depending on their size.

Step 3

Heat the olive oil in a large pan and sauté the onion and garlic until translucent. Add the tomatoes to the pan and sauté over a medium heat for about 5 minutes until they start to soften. Add the fresh spinach to the pan and stir to combine.

Step 4

Now add the cooked gnocchi to the pan and mix everything well. Season to taste with balsamic vinegar, Italian herbs, salt and pepper.

Step 5

Finally, mix in the mozzarella and allow to melt.

  • 800 g gnocchi (fresh from the chiller cabinet)
  • 400 g cherry tomatoes
  • 200 g fresh spinach
  • 2 garlic cloves
  • 1 onion
  • 3 tbsp olive oil
  • 100 g mozzarella, cut into small cubes
  • 2 tbsp balsamic vinegar
  • 1 tsp dried Italian herbs (e.g. oregano, basil)
  • a little salt and pepper to taste
  • Optional: 100 g bacon, fried
