Firstly, mix the juice and zest of the lemons with 3 tbsp olive oil, chopped garlic, honey, Dijon mustard, thyme, salt and pepper in a bowl. Place the chicken breast fillets in the marinade and leave to marinate in the fridge for at least 30 minutes (or overnight) Sprinkle with fresh parsley.
Meanwhile, clean the green beans and cook in lightly salted water for about 6-8 minutes until al dente. Rinse immediately in ice-cold water so that they retain their bright green colour.
Now heat 1 tbsp olive oil in a large pan. Fry the marinated chicken breast fillets over a medium heat on both sides until golden brown and cooked through (approx. 6-7 minutes per side, depending on thickness).
Arrange the chicken fillets on plates together with the green beans. Drizzle with the remaining marinade from the pan and sprinkle with fresh parsley.
