To make the yeast dough, crumble the yeast into the lukewarm milk and stir briefly. Make sure that the milk is not too hot, as this could kill the yeast.
Place the flour, yeast milk and all the other ingredients in a bowl. Knead the yeast dough with the dough hook for at least 5 minutes. Then remove from the bowl and knead again by hand for 5 minutes on a floured work surface.
Cover the yeast dough and leave it to rise in a warm place for 30 minutes until it has visibly increased in size.
Then roll out the dough on a floured work surface and cut out circles using a circle cutter (Ø 10 cm). Use a smaller cutter or a piping nozzle to cut out a smaller circle in the centre of the donuts.
Heat the frying fat in the deep fryer to 180 degrees. Carefully fry the donuts one by one and let them fry for 4 minutes on each side until golden brown. Once they are fried, place the donuts on a piece of kitchen roll to absorb the excess fat.
Meanwhile, prepare the icing of your choice (use either dark chocolate or coloured sugar icing) by melting it in a bain-marie. Then pour them into a deep container, e.g. a deep soup plate. Now dip the donuts halfway into the icing and then leave the icing to set.
To make the spider's web, melt the white chocolate over a bain-marie. Place the melted chocolate in a freezer bag and carefully cut off a corner. Now draw spider webs on the donuts and leave everything to harden.
