Kimchi

Welcome to the fascinating world of kimchi - the traditional Korean national dish that not only impresses with its sour and tangy flavour, but also with its health benefits.

 

In this recipe, we show you how to make pickled cabbage with the help of our Yoghurt Maker JM 4 super easy to ferment.

 

Our homemade kimchi is full of flavours and healthy bacteria that tantalise your taste buds and promote your gut health at the same time.

 

Preparation

Step 1

Wash, quarter and roughly chop the Chinese cabbage. Sprinkle the cabbage with salt and sugar, knead lightly for approx. 5 minutes and leave to soak. Then drain off any liquid that has escaped.

Step 2

Cut the carrot and radish into strips and the garlic into thin slices.

Step 3

Then mix all the ingredients together, pour into the large glass container and press down gently. Place the valve lid on and press the valve down. Now put the lid on, place in the appliance and select the "FERMENT" programme.

Step 4

The maturing time is approx. 48 hours.

  • 1 cup vegetable stock
  • 2-3 cloves of garlic
  • 1-2 tsp chilli
